Jamie's Meatballs

Enjoy Grass-fed & finsihed meatballs by Jamie Maitland

Servings:4-5

Ingredients 

  • 1lb grass-fed beef, bison or elk  

  • 1lb old world blend beef, bison or elk 

  • ½ cup water 

  • 3 tbsp coconut aminos 

  • 1 tsp psyllium husk powder 

  • 1 tbsp ground flaxseed meal 

  • 4 tbsp tiger nut or cassava flour 

  • ¼ cup fresh chopped parsley 

  • ½ yellow onion blended in food processor or grated (not chopped) 

  • 2-3 garlic cloves minced or pressed 

  • ½ tsp salt 

  • ½ tsp pepper 

  • 1 tbsp olive oil 

  • 1 pastured egg

Directions 

  1. Preheat oven to 375 F, then line a baking sheet with parchment paper 

  1. In a large bowl, measure the water, flax, psyllium, tigernut or cassava flour 

  1. In the same bowl add in all remaining ingredients and mix well. Clean hands work best! 

  1. Form into golf ball-sized meatballs and place them evenly on the baking tray 

  1. Bake meatballs for 25-30 min if you like them tender. Bake for 35-40 min if you like them crispy on the outside. 

  1. Optional: add tomato sauce. 

  1. Serve with palmini noodles, teff pasta, or just Eat them plain!
