IngredientsÂ

1lb grass-fed beef, bison or elk Â

1lb old world blend beef, bison or elkÂ

½ cup waterÂ
-
3 tbsp coconut aminosÂ
-
1 tsp psyllium husk powderÂ
-
1 tbsp ground flaxseed mealÂ

4 tbsp tiger nut or cassava flourÂ

¼ cup fresh chopped parsleyÂ
-
½ yellow onion blended in food processor or grated (not chopped)Â

2-3 garlic cloves minced or pressedÂ
-
½ tsp saltÂ
-
½ tsp pepperÂ
-
1 tbsp olive oilÂ

1 pastured eggÂ

Preheat oven to 375 F, then line a baking sheet with parchment paperÂ

In a large bowl, measure the water, flax, psyllium, tigernut or cassava flourÂ

In the same bowl add in all remaining ingredients and mix well. Clean hands work best!Â

Form into golf ball-sized meatballs and place them evenly on the baking trayÂ

Bake meatballs for 25-30 min if you like them tender. Bake for 35-40 min if you like them crispy on the outside.Â

Optional: add tomato sauce.Â

Serve with palmini noodles, teff pasta, or just Eat them plain! Â
