This is real cheese... the kind that existed long before shortcuts, stabilizers, and industrial processing.

Our Raw A2 Cheese is handcrafted on a small family farm using milk from 100% grass-fed, A2A2 cows, raised on clean pasture and milked in a carefully inspected barn. The milk is never pasteurized, preserving the natural character, flavor, and integrity of the cheese. From there, it’s made by hand using time-honored methods that respect both the animal and the ingredient.

The result is a cheese that’s rich, clean, and deeply satisfying; full of honest flavor and free from anything unnecessary. No chemical preservatives. No colorings. No anti-caking agents. Just milk, craftsmanship, and patience.

This is cheese as nature intended.

Why A2 Matters

Not all milk proteins are the same.

Milk contains beta-casein proteins, primarily A1 and A2. Our cheese is made exclusively from A2A2 milk, which comes from cows that naturally produce only the A2 beta-casein protein, the form of milk protein humans have consumed for thousands of years.

Many people seek out A2 dairy because it’s closer to milk in its original form and is often perceived as gentler and easier to enjoy than conventional milk, which commonly contains A1 proteins. While everyone’s body is different, choosing A2A2 milk is a way to return to a simpler, more traditional dairy experience.

For us, A2 isn’t a trend, it’s part of our commitment to keeping food as close to its natural state as possible.

All cheese is made with veal rennet and Celtic sea salt (salted varieties only).
