Zesty Sausage Skillet

Ingredients:

  • 1lb Cajun Green Onion Brats (or your favorite NorthStar Bratwurst)
  • 2 tablespoons tallow
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 diced red bell pepper
  • 2 small zucchinis cut in half lengthwise, then sliced crosswise into pieces
  • 12 oz cauliflower rice fresh or frozen
  • Sea salt and freshly ground black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Cilantro for garnish

 

Instructions 

 

Preheat oven to 425.  

Add whole bratwurst to a baking sheet, bake for 8-12 minutes or until cooked through, allow to cool slightly until they can be handled.  

Slice the sausage into coins and set aside.

Heat a large skillet to medium and add 2 tablespoons of tallow. Add the onion, garlic and bell pepper and cook for 5 minutes until soft and slightly browned. Add the zucchini and cook another 2-3 minutes and season all over with sea salt and black pepper.  

Add cauliflower rice and cook for 1-3 minutes or until cooked to preference. Do not overcook to avoid mushy “rice”.

Season with salt, pepper and paprika, then add the sausage back in and stir. Remove from heat, garnish with cilantro and serve right away.
