Lemon Browned Butter Cod
This is an easy weeknight meal, elevated with a fresh citrus butter sauce that feels expensive and luxurious. All in less than 15 minutes!

Ingredients:
· ½ cup AP flour (cassava flour or gluten free AP flour would also work)
· 1 tsp sea salt
· 1 tsp black pepper
· 1 tsp garlic powder
· 1 tsp onion powder
· 1 tsp paprika
· The zest and juice of one lemon
· Salt and pepper to taste
· ½ cup grass-fed butter
· 2 cloves minced garlic
· 2 tbsp finely minced fresh herbs of your choice (parsley, dill or dried Italian seasoning if you do not have fresh herbs available)
Directions:
1. Combine flour, salt, pepper, garlic powder, onion powder, paprika and lemon zest in a shallow bowl or plate.
2. Remove Cod from packaging, *do not pat dry *season with salt and pepper.
3. Preheat a large skillet to medium high heat, after 2 minutes of preheating, add ¼ cup (half a stick) of butter.
4. Lightly cover all sides of the cod with the flour mixture, place it into the hot bubbly butter DO NOT MOVE THE FISH around once you place it onto the pan so it can develop a good crust.
5. Cook for 3-4 minutes on each side, or until they naturally release from the pan and look golden and crispy.
6. Transfer the cod to a plate or platter lined with paper towel.
7. In the same pan you cooked the fish, add the rest of the butter, 2 garlic cloves and the herbs.
(double the butter, garlic, herbs and lemon to make extra sauce if you would like to have extra on pasta, veggies or rice)
8. Cook for 1-2 minutes just until the butter is slightly brown, stir frequently and watch carefully so the butter does not burn. Add the juice from the zested lemon.
9. Plate the cod, drizzle the butter sauce on top, serve and enjoy!
