Sweet Potato Breakfast Bowl


This is one of our family's ultimate favorite one pan breakfastdishes... or Lunch, or... Dinner! It is great any time of day.

Yield:7-8 servings 

 
Ingredients: 

  • 3lbs Sweet Potatoes 

  • 2lbsNorthStar Bison or Pork Breakfast Sausage 

  • 1 Lg. Green Pepper 

  • 1 Lg. Bell Pepper (any color will do) 

  • 1 Lg. Yellow Onion 

  • 4 Tbsp tallow or avocado oil 

  • 2 cloves minced garlic 

  • ¼ teaspoon cayenne 

  • Salt and pepper 

  • Optional: cilantro, chives, or sliced green onion to garnish 

  • Instructions:

Peel the sweet potato. Cut off one rounded edge along the length of the potato to create a stable base. Cut off the remaining rounded edges. Cut into 3 equal ½-inch planks lengthwise. Cut the planks into equal sticks. Cut the sticks into equal ½-inch cubes. 

Heat the tallow over medium heat. Onceit ismelted, addsweet potato cubes. Coat evenly withsalt,pepper and cayenne. 

Stir occasionally, ensuring all sides getrelatively equal time in contact with the pan, about 10 minutes. 

While the sweet potatoes are starting to soften, slice your peppers and onions, mince the garlic. 

Addbreakfast sausage, peppers, onions, and garlic. Cook all together until everything is fork tender and starts to crisp up on the edges. 

I like to serve this with sliced avocado or a fried egg on top!
