Ground Elk Chuck is a winner. With slightly more muscle mass, making it about 95% lean, and that good 'ol chuck flavor, it's tough to beat. We grind in small batches as to not overheat nor do we add any flavor enhancers, coloring or preserving agents. It's just pure, ground Rocky Mountain Elk Chuck.
