Old World Chili

1 tbsp tallow or oil of your choiceÂ

1-pound Old World Ground Blend (bison, beef or elk)Â

1-pound Ground Bison, Beef, or Elk (you can skip the old world and do 2 pounds of ground if you would like)Â

1 onion dicedÂ

1 jalapeño seeded and finely dicedÂ

4 cloves garlic mincedÂ

2 ½ tablespoons chili powder Â

2 teaspoons cuminÂ

2 teaspoons smoked paprikaÂ

1 green bell pepper seeded and dicedÂ

14.5 ounces crushed tomatoes 1 canÂ
-
19 ounces canned red kidney beans drained and rinsedÂ

14.5 ounces canned diced tomatoes with juiceÂ
-
2 ½ cups beef, elk, or bison bone broth Â

14.5 oz canned corn (optional)Â

¾ cup V8 Vegetable Juice (optional)Â

1 tablespoon tomato pasteÂ

1 tablespoon honey (optional)Â

InstructionsÂ

Preheat a heavy bottom pot to medium high heat, add tallow and allow it to melt.Â

Add ground meat, garlic, chili powder, paprika, cumin, onion, bell pepper, jalapeno, salt and pepper to the pot.Â

Sauté until the meat is browned and onions are transparent.Â

Add the remaining ingredients and bring them to a boil. Â

Reduce heat and simmer uncovered 45-60 minutes or until chili has reached desired thickness.Â

Top with cheddar cheese, green onions, sour cream, or other favorite toppings.Â
