Old World Chili


This is the most flavorful, soul-warming bowl you may ever try!

Ingredients 

  • 1 tbsp tallow or oil of your choice 

  • 1-pound Old World Ground Blend (bison, beef or elk) 

  • 1-pound Ground Bison, Beef, or Elk (you can skip the old world and do 2 pounds of ground if you would like) 

  • 1 onion diced 

  • 1 jalapeño seeded and finely diced 

  • 4 cloves garlic minced 

  • 2 ½ tablespoons chili powder  

  • 2 teaspoons cumin 

  • 2 teaspoons smoked paprika 

  • 1 green bell pepper seeded and diced 

  • 14.5 ounces crushed tomatoes 1 can 

  • 19 ounces canned red kidney beans drained and rinsed 

  • 14.5 ounces canned diced tomatoes with juice 

  • 2 ½ cups beef, elk, or bison bone broth  

  • 14.5 oz canned corn (optional) 

  • ¾ cup V8 Vegetable Juice (optional) 

  • 1 tablespoon tomato paste 

  • 1 tablespoon honey (optional) 

  • salt and black pepper to taste

Instructions 

  1. Preheat a heavy bottom pot to medium high heat, add tallow and allow it to melt. 

  1. Add ground meat, garlic, chili powder, paprika, cumin, onion, bell pepper, jalapeno, salt and pepper to the pot. 

  1. Sauté until the meat is browned and onions are transparent. 

  1. Add the remaining ingredients and bring them to a boil.  

  1. Reduce heat and simmer uncovered 45-60 minutes or until chili has reached desired thickness. 

  1. Top with cheddar cheese, green onions, sour cream, or other favorite toppings. 

  1. Family secret/weird but delicious combo: slather some creamy peanut butter on a slice of white bread and dip it into the bowl of chili!
