Elk Round Medallions are not what most folks assume them to be... They are not filet and instead are more akin to round steak. We trim the elk rounds to the point that they are completely free of fat and connective tissue and then proceed to carve them into 1" thick medallions. Fantastic when cooked to rare or medium rare, the deep, rich flavor of elk round percolates your taste buds.
