"I ordered a Bison tongue and a Bison loin. They arrived in great condition and were both delicious. I live in NY so I get the opportunity to enjoy a lot of fresh venison. It was so nice to be able to try something new with my kids. They were so excited helping me pick out the cuts we wanted to try and unpack them when they arrived. We used the tongue in a beef tongue taco recipe and it came out fantastic. We cut the loin into 12 steaks and have been preparing them a variety of ways. We can't wait to try more meats that are not available in NY. Hopefully, soon there will be more elk in stock."

I plan on buying a whole bison strip loin. As it weighs 5 plus pounds could it be cut into 2 equal sized pieces prior to freezing?
Hello Richard! Thank you for reaching out. The New York Strip Loin is actually frozen when we send it so we cannot thaw it and cut it in half. At this time we are not doing custom orders. However, because of the quality of our meat, being grass fed from start to finish, it is perfectly safe to partially thaw, cut in half, and then refreeze once you receive it. I hope this helps!
