During the great slaughter, bison were often harvested for this cut specifically. This cut is tough yet very flavorful with a collagen-rich broth. Not recommended to be prepared on a smoker or grill.

Bison Hump Roast
"Ordered the bison hump roast because it was such a great piece of meat last time. If the one we received this time had been the first one ordered I would never have ordered from you again. It was VERY fatty, not tasty, tough. We cooked this one with the SousVide method for 24 hours. I cooked the first one in a Crock Pot on low for maybe five hours, turned out delicious, tasty, good texture. This roast was just not a good one. So sorry because it was a special treat for a birthday party. Good thing we had plenty of sides 'cause no one could eat the Hump Roast. We later diced it into small pieces, flavored it and cooked it down to be used in burritos. Looking forward to trying the filets ordered along with the roast. Meanwhile the good part is that all the meat arrived fully frozen and we had fun watching the dry ice dance in the pool. Cynthia Mullins"

"I got the 2LB roast. Recipe on the site was for 3-4 lbs so had to improvise a bit. Came out very nice. However, I had asked what internal temp to cook it to. Had I done the recommended 130 I would have had cinders. Even though I used a covered, dimple-lid braiser, AND put the roast on a small rack with an inch of water under it, there were almost no drippings. Final product was very lean and almost like a cross between mutton and beef. I may try another small one and use a more liquid-intensive cooking method, like for pot roast or similar. More moisture initially may make the difference."

- Hey Cody, a bison hump roast is a very tough piece of meat but has incredible flavor... the trick is cooking it in a way that creates tenderness. This piece can be smoked if you're a master smoker but it is easily a train wreck if not done correctly.
