Our bison ring bologna is a recipe we've massaged over the years to produce what we have today. Let me tell you, it's delicious! Slow simmer in sauerkraut until the casing is slightly swelled, cut a line in the casing lengthwise and the sausage will pop right out. Slice a few chunks off and top with sauerkraut and a little mustard and you're in heaven.
