Not only is bison tongue rich in nutrients and taste, it also has a rich history. During the settlement of the American West, European markets were hot for the delicate bison tongue. The tongue was extracted, salted and shipped east by the barrel. Those were sad days for the American Bison as, among other reasons, demand for tongue almost extinct bison but the delicacy of the tongue remains. Today, our Hide to Heart mission keeps us focused on responsible & balanced whole-carcass utilization.
