"I bought the beef thymus because it was a little cheaper than the Bison. After tasting the Bison and really LOVING it, I had high hopes for the beef thymus too. Unfortunately there's more prep to do than the Bison because you need to take off the silver skin, and then I ended up wasting some of the actual organ. The taste doesn't compare to the Bison either. I won't buy again and I'm sticking with the Bison."
