Sausage Leek Quiche  


A nutritious boost on a classic, comforting dish!

Ingredients 

 
  • - 2 leeks, sliced into thin half rings
  • - 4 tbsp butter (divided)
  • - 1 lb meat of choice:
        •           - breakfast sausage (classic)
  •           - ham cubes (great for leftovers)
  •           - chorizo (for a little kick 🔥)
  • - 1 tbsp Italian seasoning (skip or reduce if using chorizo)
  • - ¼ tsp pepper
  • - 2 tbsp grated Parmesan
  • - 1 cup shredded cheddar (split in half)
  • - 2 cups heavy cream
  • - 6 eggs
  • - â…› tsp nutmeg

 

Directions:

 
    • 1. Prep the pan
      - Preheat oven to 350°F
      - Put 2 tbsp butter in a 9x9 baking dish
      - Place in oven just until melted, then set aside

      2. Cook the leeks
      - In a skillet, melt the remaining 2 tbsp butter
      - Add sliced leeks
      - Cook over medium heat until soft and lightly golden
      - Remove and set aside

      3. Cook the meat
      - In the same skillet, cook your chosen meat:
      - Sausage: brown and crumble
      - Ham: lightly sauté to warm + get a little color
      - Chorizo: cook fully (it’ll release oils—flavor city)
      - Season with Italian seasoning (if using), salt, and pepper
      - Set aside

      4. Build the layers
      In your buttered baking dish:
      - Sprinkle Parmesan cheese evenly on the bottom
      - Add ½ cup cheddar cheese
      - Layer in:
      - cooked meat
      - leeks
      - Top with remaining ½ cup cheddar

      5. Make the custard
      - In a bowl, whisk together:
      - eggs
      - heavy cream
      - nutmeg
      - Pour mixture evenly over everything in the pan

      6. Bake
      - Bake for 40–50 minutes, until the center is just set
      - Let cool for 10 minutes before slicing

      Notes (because this is where the magic is)
      - Ham version: a little milder, super family-friendly
      - Chorizo version: skip or reduce Italian seasoning—it already brings flavor
      - Sausage version: the most classic, cozy option
